Warabi mochi is one of Japan's oldest and best-loved sweets. At Bashodo, confectioners since 1868, the recipe has remained the same: a translucent jelly made from fern starch(warabi), melting and slightly elastic under the tooth, to be generously sprinkled with matcha powder and kinako (roasted soy flour) before being cut into cubes for tasting. Simple, delicate, mochi-sweet and completely addictive.
