For a matcha anko filling, Japanese pastry chefs do not use red beans, as one might expect. Instead, they useshiroan, a white bean paste with an almost neutral flavour, which allows the deep flavour of the tea to shine through. The manufacturer, Honma, takes this concept even further by incorporating green tea leaves directly into the filling. This traditional Sapporo-based company has been making itsanpan in this way since 1906, using a recipe consisting of just seven ingredients and without any added fat.
