Ryutoku Traditional Japanese Deba Knife – 5.9 in Single-Bevel Stainless Steel Blade
Originating during the Edo period to meet the needs of Japanese fishmongers, the Deba knife holds a special place in Japanese cutlery. Its thick blade and asymmetrical edge, sharpened on one side only, make it the go-to tool for filleting whole fish, removing heads, and lifting out small bones without damaging the flesh. This Ryutoku model, forged from stainless steel, pairs the strength of this traditional blade with an octagonal honoki wood handle for a natural, authentic grip. Like the vast majority of Deba knives, it's designed for right-handed use, in the pure tradition of single-edged Japanese knives.
