In 1950, Otafuku was selling a classic Worcestershire sauce when owners of okonomiyaki restaurants in Hiroshima pointed out a practical problem: it was too runny, sliding off the pancake and onto the griddle. Two years of development later, this thick, sweet and savoury sauce was born – designed to stay on the okonomiyaki rather than run off. It has since become a classic in Japan. Tomato purée, apple, treacle, soya sauce and shiitake mushrooms give it a smooth, umami-rich flavour that works just as well with takoyaki, yakisoba and grilled vegetables – or even chips, as Otafuku suggests on the packaging.
