It was Portuguese traders who brought Castella to Nagasaki in the 16th century, under the name pão de Castela, or ‘bread of Castile’. Japanese pastry chefs adapted the recipe over the centuries, turning Castella into a Japanese speciality in its own right. Sweet Factory’s recipe remains true to this simplicity: eggs, sugar, flour, honey and coarse-grained zarame sugar, with no colourings or preservatives. Serve it with green tea, or pop it in the toaster for a few seconds to bring out the flavour of the honey.
