This fine julienne peeler is made for kinpira gobo, a classic Japanese dish dating back to the Edo period: burdock root and carrots cut into thin strips, stir-fried, then seasoned with soy sauce and a little chili pepper. Its stainless steel blade, sharpened tooth by tooth, effortlessly cuts carrots, daikon, or burdock into fine 2.5 mm (0.1 in) julienne strips without snagging the fibers. It's made by Shimomura Kogyo in a region of Japan renowned for generations of cutlery craftsmanship.
