Monaka is one of the most elegant wagashi in traditional Japanese pastry-making. It consists of two thin, crispy wafers of rice dough, pressed together around a generous filling. It combines two exceptional ingredients: matcha from Nishio, renowned for producing one of Japan's finest green teas, and a paste of red azuki beans grown in Hokkaido. The result is a classic balance between the vegetal bitterness of matcha and the deep sweetness of sweet beans. Served with green tea, it's a break full of tradition, just like you'd find in the best Japanese tea rooms.
