The Amaou strawberry is an emblematic variety of the Fukuoka prefecture in northern Kyushu. Its name is an acronym that sums up everything you'd expect from a good strawberry: aka (red), marui (round), ōkii (big), umai (delicious). This is the Japanese luxury strawberry par excellence, renowned for its juicy flesh, intense color and high sugar content. Here, it garnishes these little dorayakis with a sweet, fruity pastry, sandwiched between two fluffy, lightly caramelized pancakes. A dorayaki with a strong character, and a great way to introduce a regional Japanese specialty through an everyday confection.
