Kumamoto ramen is instantly recognisable by one ingredient: mā-yu, a dark roasted garlic oil that gives the broth its distinctive toasted flavour. This style emerged in the 1950s, when Kurume-style tonkotsu ramen made its way to Tamana, an area known for nori cultivation, where garlic was added to the broth for extra depth and flavour. Itsuki, established in Kumamoto in 1878, offers this version without animal-derived ingredients, complete with a sachet of broth seasoning and a sachet of flavoured oil to add at the end. Ready in just two and a half minutes.

Soup base: salt, hydrolysed proteins (soya, maize, wheat), soya powder, flavour enhancers E621, E635, palm oil powder, yeast extract, onion powder, sugar, garlic powder 0.46 per cent, colouring E150A, spices, vegetable oils (palm, sesame, garlic)
Allergens: wheat, soya, sesame. May contain traces of milk, egg, fish, crustaceans, sesame, molluscs.
Contains: Two portions of dried ramen noodles and two sachets of broth seasoning.
Serving suggestion. To make a complete ramen dish, add to your liking: meat, soft-boiled egg and seasonal vegetables.
