Shōgayaki is a classic Japanese dish of thinly sliced pork cooked with ginger and found on menus across Japan. This ready-made sauce makes it easy to prepare at home: half a bottle is enough for around 300 to 400 g of pork. Its rich flavour comes from Morita tamari, a soya sauce from the Tōkai region that is thicker and rounder in flavour than standard soya sauce, complemented by sake and a generous amount of ginger.
A little anecdote for the curious: manufacturer Morita has been in business on the Chita Peninsula since 1665. It was also the family business of Akio Morita, who left in 1946 to found a company that would later become Sony.

Ingredients: soya sauce (wheat, soya, salt, alcohol 3.7 per cent, water, high-fructose maize syrup, sugar, ginger 8 per cent), fermented rice seasoning (syrup, water, rice malt, salt), sake, ginger extract 0.4 per cent, concentrated apple juice, vinegar, garlic, concentrated lemon juice, sesame oil, spices (ginger, black pepper), agar-agar, yeast extract, alcohol, thickener E1412, flavour enhancers E621, E631, spice extract (ginger, chilli).
