Anzutsumi is a Japanese confection belonging to the castella family of cakes, soft sponge cakes inherited from 16th-century Portuguese influences and long since fully integrated into Japanese patisserie. Each piece wraps two fillings in its golden pastry: a matcha bean paste from Uji, and a piece of soft mochi that adds an elastic texture to the heart of the cake. A limited edition to enjoy with green tea, or to offer as an introduction to traditional Japanese pastries to someone who doesn't know them yet.
