Okonomiyaki literally means ‘grilled just the way you like it’, which sums up the concept perfectly: batter, a hot griddle and whatever ingredients you fancy. This ready-made flour mix saves you from having to measure out starch and raising agents yourself – everything you need for a light, fluffy batter is already in the mix. It is made by Otafuku, a company founded in Hiroshima in 1922 that has become one of Japan’s best-known names for okonomiyaki. One packet is enough for six okonomiyaki or around forty takoyaki, the famous octopus balls from Osaka.
